My comment:
At my worst my "struggle meal" was just cheese on crackers... but something I'd actually call a recipe, is my sugar burrito. I'd actually still eat it now once in a (rare) while if I get a craving/desperately need some calories with a bit of fat and protein.
Large tortilla. Spread liberally with butter. Sprinkle about a teaspoonish of white sugar.
2-3 oz of colby jack cheese (cheese type is important, I've tried others and it's so much worse).
3-4 teaspoons of sugar into the cheese, mix well. More sugar = better flavor, but means it doesn't melt into the cheese and butter as well and gets gritty. So this is a flavor/texture trade off.
Roll up burrito, microwave enough that the cheese is melted but won't harden too much when it starts to cool. Gooey is best.
Eat with a fork because it's WAY TOO STICKY.
